Maple syrup creamy mousse

  • 2 egg whites
  • 250ml maple syrup
  • 1 pinch of salt

Boil the maple syrup at 120°C using a jam thermometer. Whip the egg whites until stiff. Slowly pour the boiling syrup and continue mixing. Serve in cups. So good for cake glazing also.
